19 Action News anchors share Thanksgiving recipes

Broccoli Casserole - Paul Orlousky, Reporter

1lb fresh broccoli

1/4 cup butter

2 Tbsp flour

1/4 tsp salt

1 cup milk

1-3 oz pkg cream cheese

1/2 cup shredded sharp cheese

1 cup soft bread crumbs

Cook cut up broccoli.  Drain.  Melt 1/2 butter. Blend in flour, salt and dash of pepper.  Add milk. Cook stirring constantly until thick and bubbly.  Reduce heat, blend in cream cheese until smooth.  Put broccoli in casserole dish.  Pour sauce over, mix lightly.  Top with sharp cheese. Melt remaining butter.  Toss with bread crumbs. Put on top of casserole. Bake 350 degrees, 40-45 mins.

Pumpkin Balls - Jamie Sullivan, Traffic Reporter

1 can of pumpkin puree

1 cake mix (I like yellow but spice is great, too)

Handful of semi-sweet chocolate chips(Who doesn't love a lil' chocolate!?) This step is optional.

Mix just those two ingredients together. Spray a mini muffin pan(or larger one and you can use muffin cups) and just drop in the ‘dough' --  its VERY sticky but that's what makes them so moist.

Bake at 350 for anywhere from 12 minutes – 25 depending on the size. Just check with toothpick. These are okay to cook a little more, they're good no matter what.

Peanut Butter Pie - Beth McLeod, Weather

1 graham cracker/chocolate pie crust (pre-made)

1 cup powdered sugar (5 oz)

3/4 cup creamy peanut butter (9 oz)

6 oz cream cheese (1/3 fat)

2-3 tbs milk

1 8oz Cool Whip (Light) thawed

Hershey syrup

Mix together peanut butter and cream cheese...add in the milk...then the powdered sugar. Fold in by hand the cool whip.  Pour into pie crust.  Refrigerate.  Serve with Hershey' syrup over the top!

Beth's Pecans! - Beth McLeod, Weather

Toss in a bag:

1# pecans whole and raw

1 egg white..beaten stiff

Mix together: set aside

1 cup usage

1 Tbs salt

1 Tbs cinnamon

Put sugar mixture in with the pecans that have been shaken with the egg white...shake until everything is completely covered.  Spread out on a cookie sheet.

Cook:

250 for 30 minutes

275 for 15 minutes

Stirring every 15 minutes.  Don't over cook!
